Can I substitute pineapple for berries in crumble recipe?

We found ourselves with three whole pineapples. I cut them open and they are incredibly sweet, but this is a lot of pineapple and it won't be finished before it goes bad. In the meantime, I have to make a dessert for an event tomorrow and I have an incredible recipe for mixed berry crumble.

Can I just use pineapple instead of fresh berries? Will that be a disaster, or will angels sing? Any modifications suggested?

  1. my experience is that pineapple has too much liquid to do well in a crisp or crumble - always can go with pineapple upside down cake or, if you have access to a grill, pineapple brushed with molasses, rum, melted butter on the grill, served with rum raisin ice cream is super good.

      +1 on the grilled pineapple! Recently catered a mexican themed buffet dinner party for 60+ guests. After they dug into the chili relleno's, pollo colorado, pork chili verde, sides and fixin's.....

      Dessert was grilled pineapple with cinnamon-butter-rum glaze, and chili brownies and blondies. BEST received dessert I have done at an event in a while - went over GREAT!
