So tell me, what is your favorite classic italian deli recipe that can be made in bulk, but pleases the crowds.
White bean salad. Lots of garlic, red pepper, celery, olive oil, fresh herbs, some sweet red pepper, wine vinegar, coarse ground black pepper and fresh parsley. Throw some chunk tuna in if you like.
Foot long Italian subs.
Caprese salad on a skewer! Sorry, I keep thinking of one more thing. :)
One more--how about a pesto pasta salad? Or if native tomatoes are available, Sicilian pesto (pesto with tomatoes). You could throw bocconcini in there if you were so inclined. :)
Giardiniera--the recipe I use, adapted from the New York Times, yields 2 quarts.
Folks always seem to enjoy caponata, and the ingredients are in season for the most part.
antipasti and salads, no meat proteins
Could you be more specific? Are you asking for salads? Antipasti?
