So tell me, what is your favorite classic italian deli recipe that can be made in bulk, but pleases the crowds.
Could you be more specific? Are you asking for salads? Antipasti?
antipasti and salads, no meat proteins
Folks always seem to enjoy caponata, and the ingredients are in season for the most part.
Giardiniera--the recipe I use, adapted from the New York Times, yields 2 quarts.
One more--how about a pesto pasta salad? Or if native tomatoes are available, Sicilian pesto (pesto with tomatoes). You could throw bocconcini in there if you were so inclined. :)
Caprese salad on a skewer! Sorry, I keep thinking of one more thing. :)
Foot long Italian subs.
White bean salad. Lots of garlic,red pepper, celery, olive oil, fresh herbs, some sweet red pepper, wine vinegar, coarse ground black pepper and fresh parsley. Throw some chunk tuna in if you like.
