Anyone know where I can get InstaCure aka Prague Powder for curing meats?

Need today so online is no help. Boca/Delray area ideal but will travel if needed.

Here's an online example tho:

  1. A common FAQ seems to be "Can I substitute Morton's Tender Quick" for these.

The answer seems to be "not necessarily".

Excellent FAQ here on these curing salts, nitrate, nitrite, etc...

And if you are wondering, I am trying to make my own bacon for the first time. I have some lovely Kurobuta pork belly and am using a recipe from The Ravenous Pig that calls for 1 tsp for 1.5 lbs meat.

I usually purchase mine at www.savoryspiceshop.com.

Thanks JPR... I live up in Delray so Collins Ave would have been a real last resort...

Fortunately a local chef came through and gave me all I needed, now I have time to order online.

        Thanks again.
