Got the makings for Bubble and Squeak...any thoughts on a protein to serve with?

I'm heading to the grocery store on my way home from work, and welcome any suggestions!

    I'd pan fry some good sausage or a chunk of country ham.

      I would eat bubble & squeak with just about anything...sausage, pork chops, lamb chops, steak, salmon...

          I added diced chicken, cooked rice, & 5-spice powder to my cabbage & onion mixture tonight. From Irish to Chinese...ish.

              Smokey picnic ham is my favourite meat to use in this sort of dish.

                Thanks, all. I used bacon fat (and the bacon it rendered out of) to cook the B&S, and fried up some very tasty brats (can't remember the brand unfortunately, and the wrappings went out in the trash before I thought to look....)
