Adventurous Diners Looking For London's Best

My husband and I are going to London in August, and we're hoping to eat at a variety of restos (a couple of high end spots mixed with casual/inexpensive fare). We're staying in Chelsea but aren't opposed to a little jaunt for something really fantastic. We're not vegetarians, and places with good cocktails are always a priority. What would you recommend?

I'm not a London (or Chelsea) expert, but here are a few suggestions to get you started. Depending on where in Chelsea you are staying these could be a long or a short walk (or a very short taxi ride):
Bibendum is not modern or cutting edge but it serves great traditional French style dishes in a fantastic 100 year old building.
Rasoi Vineet Bhatia is excellent modern and high end Indian cooking served in a slightly idiosyncratic setting.
Gordon Ramsay's original / flagship restaurant is in Chelsea. The food is refined, and they make an effort to make your visit memorable. The lunch there is a true bargain.

I've never been but the Painted Heron looks great for high-end Indian (I'm especially drawn to their brunch menu).
