Recommended Chinese Dumpling recipe without cabbage?
Hi I want to make dumplings today but I don't have cabbage on hand and don't want to go to the store (again) but I do have ground pork.
any good recipe for a filling without cabbage?
You can use lots of things for dumplings.
Chinese chives, leeks, ramps, spinach and even American cabbage will work as long you blanch it first (given how tough it is).
But my recommendation would be spinach. If you don't have fresh, you can use frozen, which might be better b/c it has less liquid.
I never use cabbage!
I use pork, green onions, wood ear mushrooms, shrimp and cellophane noodles.
seasoning with oyster sauce, sesame oil, fish sauce, and S+P
i just use meat, garlic, ginger, scallions, soy, sesame oil.... i use an andrea nuygen recipe.
We used to put cabbage in our pork and Chinese chive dumplings, but often don't anymore. It's just filler.
