Fig paste for fig ice cream

I admit it I'm a shameless plagurizer. I went to Xanath ice cream in the sf mission last night and had their fig ice cream. I'd like to recreate it and I need a fig paste source. Anyone know where I can get some? Thanks!

  1. I think at Xanath they just cook down ripe figs in house. Maybe they'd sell you some?

    The commercial fig pastes I've seen retail at Spanish Table and cheese shops all have sugar or honey (they're like jam cooked down to a paste) and often nuts.

    Pure fig paste is available wholesale, you could probably order it though you might have to buy a 10-lb. tub.

    You might look in the frozen food section of a Mexican market, the Spanish name is higo. You might try Middle Eastern stores as well.
