Canned Green Chilies

My H just came home with twelve cans of green chilies (some whole, some chopped).

I'm thinking of incorporating them with eggs, and with fajitas, but other than those uses, what do you do? I need ideas. Thanks!

    I use in my chili and in my green chicken enchiladas (oh man, I love those). I think I usually like the whole better. i would not use in fajitas, but then again I don't make fajitas much. In a salsa might be nice.

      Obviously fresh roasted are better, but green chile cheeseburgers.

        They are good in chili and I use them when i make taco filling. They will be good in the can for up to a year, I found some once in the back of a cupboard that were a couple of years old, but the can was seriously rusting (the joys of a humid climate) so more than a year I can't vouch for.

          Blend them up with cilantro, and canned, or fresh tomatillos (oven roast them 1st with a few jalapenos, and mucho garlic) and make chicken, or pork Chile verde.

            Thank you all. I might try to make a chile verde sauce w/o cilantro (I'm one of "those" cilantro people :-) ) and I love the chili & enchiladas ideas.

              Grill yourself a nice juicy burger, or chicken cutlet and top with jalapeno jack, and a green chile. Condiments are up to you!

              I myself buy them by the dozen. I use them anywhere diced tomatoes are called for. I use them in anything Mexican. I use them when I want a touch of heat. They are not overwhelming, if anything I'd call it a secret ingredient. Along with Rotel, they are always on hand.

                On a scale of 1-10, how hot are they to your taste?

                  They're at most a 2 or 3 on a scale of 1-10.

                      Thanks y'all! H hates "hot" so I'm glad I can use them in dishes for him (since he bought them and all...)

                  I use a can in an enchilada casserole that my SO likes. I also use them if a recipe calls for green bell pepper (obviously only if it requires the pepper to be chopped up) because I can't stand green bell peppers.

                    This is a HUGE redemptive thing for me. I really can't eat green bell peppers anymore, but I can (and do) tolerate jalapenos, cubanos, serrano, etc. Weird.

                      Not weird, I hate green bell peppers; red I can tolerate if I personally roast them myself, but not raw. I love all other peppers however.

                    There are a number of casseroles that are good with canned green chilies. I like to make one with sauteed sliced yellow summer squash, onions, cumin, canned green chilies, throw in a shallow baking dish with egg milk and cheese then bake it all off.

                      I use them to make a similar chili relleno casserole.

                      Heck, I use them in everything really. I honestly had a little flash of jealousy when I read the OP. I want the green chili fairy to visit me!!
