Vegan brunch on Sunday
My brunches always end up having themes, but there's usually: a couple of salads (fruit salad, pasta- or grain-based salad); guacamole or baked artichoke dip; bruschetta - which can have a million different toppings, such as smashed avocado or basil-strawberry salsa; and bite-sized desserts.
I love ninrn's suggestion of a pitcher of fruit smoothie!
This is my go-to vegan brunch buffet for a pretty big group -- nutritious, substantial, brunchy-feeling, kid/teen friendly:
Tofu scramble w/ lots of veggies and mushrooms
Grilled or toasted whole grain bread with tahini-miso spread
Spelt pasta salad w/ vegan pesto, baby spinach, cherry tomatoes and artichoke hearts
Mini vegan blueberry muffins
Alternate Southwest version:
Tempeh & kale breakfast burritos with red chile
A big salad w/ pepitas, roasted red peppers and corn
Guacamole & chips
A pitcher of fruit smoothie
Mexican coffee or hot chocolate made w/ almond milk
