Plus lots of good crusty french bread. Yum.

I also like an aragula or watercress salad with a basalmic vinegarette. Most importantly, there has to be lots of cold beer.

Plano Rose had a good idea. Rice is almost an ingredient, so to say you serve gumbo with rice is almost like asking what do you serve with a burger and getting an answer:bun.

My apologies if that came across as rude, I am sorry, especially being a newbie here, and rare LA visitor. Most folks I know serve their gumbo, or buy it take out with potato salad. I don't particularly care for potato salad, so I have a second bowl of gumbo, instead. [;)]

We just had this discussion on the New Orleans Chowhound board. Of course, rice is most common. However, in southwest Louisiana, non-French eaters of gumbo sometimes serve it with/over cornbread. Old timers often serve it with a boiled egg, and then there's some folks who say potato salad.
