what to do with the other half of the can of bamboo shoots

any ideas? How long will they last in the fridge if I drain and put them in water?

        You can freeze them (while they're damp, but not in water). They'll be a bit mushier when thawed, but it's not so noticeable in soups, wet curries, or chopped up into dumplings and meatballs. Alternately, they can be julienned and pickled with rice wine vinegar (or lime juice) and chili garlic paste for a really nice condiment. They'll last months this way if properly prepped and stored.

          Add to your Chinese style stir-fry mix vegies, with our without your favorite meats. Chicken is my preference.
