A couple of thoughts which might offer an enjoyable counterpoint once you've indulged in the Michelin-starred extravaganzas that await:
La Ceriserai on Blvd Edgar Quinet, close to Montparnasse station. The 14th arrondissement is not on the tourist trail and this tiny restaurant is not flash by any means, but it is delicious, authentic cooking from South Western France done with care and passion and charm (he cooks, she does front of house). A real favourite.
Place Dauphine is at the tip of the Ile de la Cite (right where the Pont Neuf crosses the island). It's a haven of charm only a couple of hundred yards from Notre Dame and even closer to the must-visit Sainte Chapelle. Several better than average bistros surround this pretty, traffic-free square. We particularly enjoyed Ma Salle a Manger right at the tip of the square closest to the bridge. Probably the least-fancy one in the square but proper bistrot dishes and some good, honest old-fashioned cooking.
Also on Place Dauphine is Caveau du Palais where we've eaten on most of our visits to Paris. Charming, good food, nice atmosphere and terrace if the weather is warm enough. Great tarte tatin! At Mont St Michel, we liked the Ferme Saint Michel, which is across the causeway from the Mont itself, but worth the trip.
