best burger recipe
I think it's hard to beat a grilled marinated tempeh as a veggie burger. I usually soak squares of tempeh overnight in an Asian marinade that's some combination of vinegar, sesame oil, soy sauce, scallions, ginger and garlic (sometimes lemongrass and coconut milk, too), or a Mediterranean one with balsamic vinegar, olive oil, tomato puree, basil or oregano, and garlic. You need plenty of acid and some kind of fat, no matter what the mixture. Then just grill and top with cheese if you don't need them to be vegan. They're even better with sauteed mushrooms that have been tossed in the same marinade, avocado, lettuce and tomato.
I made these for the veggie eaters at one of our BBQ's last year. Everyone asked for the recipe afterwards. They freeze really well too for a quick lunch, cook right from frozen, don't thaw first.
The first couple I did on the grill broke apart so make sure to pack them really well or use a grill basket.
