Ideas needed for leftover crudité please

I have a bunch of leftover raw vegetables from a party (zucchini, red bell pepper, carrots, celery and cucumber). I'd like to make something with them instead of just grazing on them raw. Other than a minestrone soup, I'm drawing a blank. Any ideas?

  1. roast them. except for maybe the cuke. make a soup out of those. or add to sandwiches and salad. toss with olive oil, crushed red pepper, garlic, and toss with pasta.

      I roast vegetables once or twice a week. So good and healthy.

      1. Make a frittata, sans the cucumber and carrot.

        1. Dice the carrots and celery and freeze them to use later in a soup or in chicken stock. Thread the zucchini and bell pepper onto skewers along with mushrooms, onion and, if desired, meat for a dinner of shish kabobs.

          Use the cucumber to make tzatziki to eat along with the skewers or with another meal.

          1. Health salad with a nice zippy vinegar dressing. A quick version that comes to mind is this one and it has a nice crunch also works well in a sandwich.

            1. There is something called "A to Z Bread" which is all over the Web in infinite variations. It's a quick bread. I can't believe you couldn't use the zucchini and carrots raw, but shredded; perhaps sauteed or roasted red bells and celery (account for the extra oil...yeah, scrape it all in!).

              Make a quick pickle of the cucumbers with rice wine vinegar, a pinch of sugar if needed, a pinch of salt, maybe a little water. Refrigerate.

              1. Slice and stir fry with chicken, beef, pork or shrimp.

                  This was my suggestion sans cukes.

                2. Take 4 C. of them total, shred each kind separately. Use to top a veggie pizza -- crescent roll dough crust baked/cooled, topped with a 4 oz cream cheese/ 1 T. dry ranch dressing/ 1/2 C. Miracle Whip dressing mixture, then add the shredded veg and some shredded cheese.
