Austin: Gene's to serve gumbo for Mardi Gras

I saw this weekend that Gene's Poboys is serving gumbo tomorrow (Tues.). He said that some local TV station will be filming him making it in the morning. I think Tuesday is normally jambalaya day, so it could be quite a lunch tomorrow. I hope I can make it from work, but I doubt it. If anyone makes it, let us know how it went.

  1. Thanks to Carter (who was also there), I had the good fortune to taste Gene's gumbo today. Very good, with sausage, crab and shrimp in a light broth. I prefer a darker roux, but that's a whole 'nother discussion.

      I agree about desiring a darker roux, and I have to say I also think it was a bit too greasy. Not bad, but not as good as a lot of the other dishes Gene serves. My group split two poboys (catfish and oyster) which were excellent. The whole meal was a good start for Mardi Gras, but bad for work productivity. :)
