I have great access to fresh, never frozen swordfish and so often would like to buy it and freeze some for later but have read numerous articles that it's not a good fish to freeze. Why is this? Do you ever freeze swordfish?
I buy swordfish steaks at my fish market all the time and freeze them and they're fine, especially for pasta sauce or Sicilian style, with tomatoes, olives, and so forth. I do wrap them carefully in freezer tissue and a nice, tight bag.
