Best egg substitute in salad dressing?
This soba salad recipe on Epicurious looks simple and good:
Can someone recommend a decent vegan egg substitute for the raw egg called for in the recipe?

i'm not sure the raw egg is doing much other than binding (the method makes an emulsion).. as for flavor, i doubt if it adds much. I'd try it without completely: my guess is you'll never miss it.
However, if you feel you really need to thicken it, you could try making some chia gel (chia seed in water). you could also try a tiny bit of tofu, blended.
For this recipe, but not necessarily as a general egg substitute, I'd try a tablespoon or two of tahini.
