Books / Writings by Jean Pierre of Chez Panisse
From what i understand, he was a head chef at the restaurant, but retired earlier this year.
I was wondering if he wrote any articles or books.
I have several chez panisse books -- i'm not looking for ones written by Alice Waters. But perhaps certain subsections of her books were written by him?
re: Robert Lauriston
Cool to see his new business. Didn't know about that.
I'm a dyed-in-the-wool CP fan, but never use the cookbooks, which aren't well written and, methinks, not well tested--so while, as you say, many recipes must be his, I don't think they capture his art/craft (when you compare the recipes in David Tanis's two solo books w/ the ones in the CP books, they are day (solo)/night (CP) re care of writing and success in outcome).
