Costco: different states, different tri tips?

  • 1

We moved to AZ recently, and the tri tip at Costco here is longer, flatter, thinner, and has only a one-way grain, whereas the ones in CA (near SF) were shorter, thicker, and had two grain directions. Is this a different cut with the same name, or a differently cut tri tip? I haven't cooked it yet, so can't comment on the flavor or texture yet. Would like to hear your experiences.

  1. The Tri Tip cut is very regional, won't find it on the east coast. Just like steak tips on the east coast, they're called flap meat on the west coast.
