I just butchered my first pig's head and I'm wondering whether the ears are freezable as I want to try them, just not today.

Buy frozen pig ears all the time. Wouldn't eat them raw, but defrosted pig ears are just fine for frying or in stews (braises).
Sure, they can be frozen. They are just skin and cartilage. They can be frozen raw or after simmering till tender.
Scub them now. Thefreezing seems to "set" any dirt or blood.
Frozen is the only way I can get them other than dried and cured in strips for my dogs.
