Dressing ideas pork tenderloin salad?
I picked up a lovely pork tenderloin tonight and plan to use it in a salad - sliced and on top. Any ideas for a good dressing/vinaigrette?
I immediately though of Cuban Pork Mojo, and looked up a recipe for this dressing. (adapted from this link): http://www.slimgenics.com/kimk_recipe...
Cuban Mojo Dressing:
1 heaping tsp. cumin seed (whole seed, not ground), dry toasted
2-4 cloves garlic, crushed and peeled
1 jalapeno or Serrano chili, seeded and deveined, coarsely chopped
1/2 tsp. Salt
1 lemon, juiced (about 2 Tbsp. juice).
2 tsp. neutral vegetable or olive oil (I might use more oil than this….
)2 oranges, juiced (about 1 C. juice).
1 lime, juiced (about 2 tsp. of juice).
1 tsp. honey (or to taste).
1 tsp. soy sauce
Chopped fresh cilantro to taste
Chopped fresh parsley to taste
Blenderize. (You might use a tomatillo, too).
A Chimichurri-based dressing. Love me some chimichurri.
