Chez Nous in Austin

Went by Chez Nous in Austin for a light meal before a Sixth Street birthday party and left somewhere between shocked and disappointed.
Some of you may remember that the owner of this nice bistro electrocuted himself doing home repairs about a year ago. I believe it is now run by his wife and some of the longer term employees.
I hate to complain after the year they've all had, but my Salad Lyonaise came with bell pepper instead of lardon, rendering it some sort of annoying, pale cousin to the original great dish. I asked the wait staff what happened. Apparently, some of the customers had deemed the perfect original "unhealthy." To boot, there was no bacon in the kitchen. AT A BISTRO. Damn you, food police! Is nothing sacred?
Moving on, the night we were there, there was no steak frites on the menu. AT A BISTRO. Unfortunately, this place used to serve one of the best renditions of steak frites in Austin. Now I find myself really mourning the untimely demise of the owner and apparently, the loss of his fine, authentic bistro.
Health nuts, be gone! This is Texas and we Texans insist on our normal dose of animal fat, without which many foods are completely robbed of their intended flavor and texture and left mere weak reflections of their former selves.
