Antipasto Salad From The North End Deli's
When you go to Italian deli's, they sell something called Antipasto Salad. It is a mixture of cubed Italian cheese, Cubed Italian Cold Cuts, and various Peppers and Olives, Mushrooms and, Onions. The Salad is in some type of brine/oil. Does anyone know what is used for the brine/oil the salad is in?
I would call it more of a dressing, Joseph. When I've tried to recreate it at home, I've had success using wine vinegar, EVOO, salt, pepper, crushed garlic, crushed red pepper, and a pinch of sugar.
This is an excellent recipe, though I add meat/cheese and omit the romaine.
