Blue cheese - most firm and crumbly varieties?

I love blue cheese and the creamy varieties are great, but I'd love a blue that I could easily crumble without a quick chill in the freezer. I have had some success with Rosenborg Danish Blue and Roth Kase Moody Blue but are there any other particular varieties which are known to be less creamy?

    It can vary even within a particular cheese.
    I've had Stiltons that are quite crumbly and others that were creamy.

    I think it depends on age and younger Stiltons are less creamy/more crumbly than the older ones.
