I've not been to Norman's in a long time, but I see my two favs are still on the menu and both of these are fantastic:
PAN COOKED FILLET OF YELLOWTAIL SNAPPER
Asparagus Spears ~ Citrus Butter Sauce ~ "Belly" Of Garlicky Mashed Potatoes
RHUM AND PEPPER PAINTED GROUPER
Mango Mojo ~ Cuban Sweet Potato Mash En Poblano
I actually bought his cookbook and now make these at home as well on a regular basis, always big hits. I would post one of my photos but would probably do a disservice to the professional presentation. :-)
I've been to Primo - but only in Maine, and in June - so I can't say what's good in Orlando as (I believe) much of the menu is locally sourced and seasonal.
