What to do with pea shoots?

I bought some pea shoots (charmingly called "shamrock greens") at my local farmers market over the weekend. I had them as a replacement for lettuce in my favorite sandwich, and they were delicious, but I have a lot leftover. What else can you do with them?

  1. They are lovely stir-fried very briefly with ample slivers of garlic.

      1. Pea shoots are highly regarded in Cantonese Chinese cuisine. It is usually stir fried.
