Murray Bridge Australian Sharp Cheddar

The cheese department at Star Market in Salinas, CA said it got a good deal on this cheese, allowing it to sell it for $6.99 per pound instead of the usual $10. The label says its aged a minimum of nine months.

A white cheddar, this slices evenly and has a smooth rather than crumbly texture. It melts nicely and has a distinctive tang in the finish. I'd peg it at medium+ sharp. There is a sweetness to the milk that perhaps tones down the inherent sharpness.

      Thanks, though I'm not sure that I'd buy it again. The last bit went into Easter dinner's potato gratin and it served admirably for that purpose supplemented by some leftover bits of garlic and herb cream cheese.
