a little late on this one but wanting to make homemade corned beef...it will take a few days, but one of the ingredients is pink curing salt.anyone know where i can get it? and what would happen if i didnt use it?brookline/newton/watertown
I just picked some up at Williams Sonoma.
*its the americas test kitchen recipe-about 4 days.(i realized i should clarify when i saw a recipe just now that takes 2 weeks!)

If you don't use it, your corned beef will taste a little different (less "cured"), and it will be grey rather than red.
