Vegan St. Patrick's Day

What can you make for a vegan St. Patrick's Day? So far I have Vegan Irish Soda Bread but want something traditional and vegan to go with it. Any ideas?

    Off the top of my head:
    Colcannon (made w/ cabbage or kale)
    Glazed carrots
    Curried parsnips
    Braised turnips
    Peas w/ mint & lettuce
    Marinated/braised leeks
    Roasted Brussels sprouts

      Colcannon was the first thing I thought of, too....

            We always do parsley potatoes on St. Patrick's Day. It's an Irish staple!


            It calls for butter, but you could certainly sub in some Earth Balance.
