Vegan St. Patrick's Day

What can you make for a vegan St. Patrick's Day? So far I have Vegan Irish Soda Bread but want something traditional and vegan to go with it. Any ideas?

We always do parsley potatoes on St. Patrick's Day. It's an Irish staple!

Off the top of my head:
Colcannon (made w/ cabbage or kale)
Glazed carrots
Curried parsnips
Braised turnips
Peas w/ mint & lettuce
Marinated/braised leeks
Roasted Brussels sprouts
