What can you make for a vegan St. Patrick's Day? So far I have Vegan Irish Soda Bread but want something traditional and vegan to go with it. Any ideas?
Off the top of my head:Colcannon (made w/ cabbage or kale)Glazed carrotsCurried parsnipsBraised turnipsPeas w/ mint & lettuceMarinated/braised leeksRoasted Brussels sprouts
Colcannon was the first thing I thought of, too....
What about boxty? Seems like there are endless variations and oh so tasty!

We always do parsley potatoes on St. Patrick's Day. It's an Irish staple!
It calls for butter, but you could certainly sub in some Earth Balance.
