Vegan St. Patrick's Day

megant620 Mar 10, 2013 03:06 PM

What can you make for a vegan St. Patrick's Day? So far I have Vegan Irish Soda Bread but want something traditional and vegan to go with it. Any ideas?

We always do parsley potatoes on St. Patrick's Day. It's an Irish staple!

It calls for butter, but you could certainly sub in some Earth Balance.

Isa Chandra posted this yesterday on the PPK blog:

If it weren't my husband's birthday weekend, this would be my choice.

What about boxty? Seems like there are endless variations and oh so tasty!

Off the top of my head:
Colcannon (made w/ cabbage or kale)
            Glazed carrots
            Curried parsnips
            Braised turnips
            Peas w/ mint & lettuce
            Marinated/braised leeks
            Roasted Brussels sprouts

Colcannon was the first thing I thought of, too....
