Only got through part 2 and then just refrigerated the meatballs. Am I going to poison us by finishing the recipe tonight?
So long as they come to 160 F internal temp the next day (i.e.: don't just warm or toss them in sauce- give it a good proper simmer), you're good!
Well, I eat leftover rare hamburgers, often cold, so I say you are fine. That said I do grind my own meat.
