Suggestions for Sydney's Finest Dining

Will be in Sydney soon and will have 3 dinners. We would like to try "Modern Australian Cuisine" at the highest level. We want Sydney's equivalent of a Michelin 3* experience. Quay, Marque, Est. seem to be on all the lists, any other hidden places? Food is the most important criteria and the more local the ingredients the better. Thanks!

    There's not much "hidden." Everything is pretty well known. I'd suggest Quay and Sepia as my favourites at the top end.

      Agree with BTG - one that is ""hidden" is "Sixpenny" not a 3 star but great reputation - I have yet to get there.

        I second SEPIA, Martin Benn is brilliant, and now you can also have a more casual dinner by the bar.

          Love love love Sean's Panaroma in Bondi.

          10 years ago I had one of the best meals of my life at Tetsuya's..rated in the top ten list of best of best in the world.
