What veggie side would go with this dish?

I need some help finding an appropriate veggie side for a dish.
I am making a Persian dish of saffron chicken and rice pilaf. The chicken is braised with caramelized onions and saffron. The rice has saffron, candied orange peel, shredded carrots, sour barberries and pistachios. The notes are sweet and acid. What veggie side would complement this? I don 't want to just serve chicken and rice, keeping in the Persian theme is not a concern.

  1. I would do a simple sauteed zucchini or roasted cauliflower. Minimally seasoned, just S&P, so the saffron will shine. Maybe also some yogurt with shredded cucumber, garlic, S&P, bit of dried dill and/ or mint.

      1. Even though staying Persian is not a priority, there are some interesting possibilities within that cuisine:
