I have a recipe that is baked in a 9x5 loaf pan. I found a chart and did some extrapolating and come up with 16, 2 3/4", cupcakes. Does this sound right?

could be....since you are filling the cupcake pan, you fill them as much or as little as you want to get the number of cupcakes that you need. I typically make at least one spare cupcake so that I can eat it/test it right away.

a 9x5 loaf pan holds 8 cups of batter. that is a TON of cupcakes.

According to your chart (different from the one I found) it would in fact be 16 cupcakes.
