Looking for Hot Fudge sauce recipe that stays soft over ice cream.

I am craving a sundae and would like to make my own hot fudge. A travesty, perhaps, but I'd like something akin to Dairy Queens hot fudge, which stays soft over ice cream. I am also open to variations, such as chocolate sauces or syrups.

Speaking of Dairy Queen, any idea what that crumb layer is made of in the middle of their ice cream cakes?

  1. My favorite chocolate sauce is one I just make by just melting a couple of squares of dark chocolate (usually Ghirardelli 80%) together with some half-and-half in a big ladle over a gas burner. Stir with a teaspoon as soon as the cream starts bubbling. It's the easiest way to make chocolate sauce for one or two people and it does stay soft over the ice cream.

    This is a great recipe for a true fudge sauce and it stays pretty soft over ice cream, too (the secret is the Lyle's).:

    It's been a LONG time since I had a DQ ice cream cake, but I think that layer is made sort of like a cheesecake crust -- chocolate oreo-type cookies crumbled up and mixed with melted butter and a little sugar.
