Red Velvet with Butter Roux Icing in NYC?
I'm trying to find a bakery that does a proper butter roux icing for a red velvet or chocolate cake, as prepared for the traditional Waldorf red velvet cake. It seems all the bakeries in the city make their red velvet with either a cream cheese or traditional butter cream frosting.
I found your post by searching on butter roux, sorry you did not receive any suggestions. If I lived in NYC and could not get my RVC with butter roux (also known as Ermine) frosting, I would certainly make my own, it is worth it. I use this recipe http://www.bakespace.com/recipes/deta...
