Wheatberries

Looking for a hearty, salad idea with wheat berries. Any response to this is welcome.

    I made this as directed (I did cut down on the oil) and loved it! I ate it both warm and cold with a little splash of soy. It stored well in the fridge and traveled well to work for lunch.

      I use then the same way I would any grain salad (quinoa, farro etc) or couscous.

      I especially like lots of herbs, cilantro, basil, parsley and mint. Then cukes, tomatoes, green onions, peppers, kale. if I have feta on hand will throw that in. Toss with lemon, olive oil and garlic, s&p. Because the wheat berries are heartier, you may need extra dressing.

        Choose a cuisine and make the dressing components and herbal parts match that cuisine. Then pick out your veggies and beans. Combine. One unexpected element I've seen is roasted sweet potato cubes.
