I just finished smoking 4 lbs of bacon. I figure there has to be a great use for the beautifully smoked skin. I have always felt guilty when discarding it in the past. Does anybody have a good suggestion? Thanks.
Use it to flavor beans or split pea soup.Cut into small pieces and deep fry it until they puff for smoky chicharrones.
