Vegetarian Friendly Foodie Recommendations in Takayama, Kanazawa

My husband and I are planning a two week trip to Japan in May. I am vegetarian, but am fine with dashi broth. We both enjoy great food, and are generally adventurous.

I have managed to find great veggie-recommendations from the chow board for Tokyo/Kyoto. I am having difficulties doing the same for Takayama and Kanazawa.

Do you have any recommendations for reasonably priced dining options. And one or two splurge-worthy options? Alternatively, would it make sens to stay at a ryokan (Hiranoya Bekkan) with meals included to avoid hunting around for vegetarian friendly options instead?

    Well I always find it ironic, or rather oxymoronic, that people who identify themselves as vegetarian also claim to be adventuresome. But anyway,....both towns might have a couple of exclusive vegetarian places. Have you looked into Shojin (Buddhist vegan) places? Might be one or two of these in those cities...Kaga cuisine isn't really a veggie centric cuisine. But in Takayama, the mountain vegetables, mushrooms, and a type of miso called Hoba are pretty well-known. I guess you could pick around restaurant menus for these types of dishes.
