I am hoping I can find some help on here. I want to patatas bravas that tastes like the dish I had in Madrid. Recipes for it are all kind of different. Does anyone know a truly authentic recipe for this? Bon Apetit's May issue on Spain some years back had a perfect recipe, but I cannot find it on either the BA website or Epicurious. Any help would be appreciated! Thanks in advance!
There is no single recipe for patatas bravas and, as I understand it, even the style of the dish can vary from region to region. Google has thousands of hits on recipes and I'd suggest you just look at some to see which look as though they might suit your palate.
