I was recently in Costa Rica and loved the patacones. I've got the tortilla press to flatten them, but am confused as to if I fry them twice or boil flatten and then fry.
I remember watching a Daisy Martinez show where she made these. Twice fried, I believe. Also called Tostones in some countries.
