Grill Marks Restaurants
Lately I have noticed that restaurant foods that are grilled like, salmon, ribs, steaks have a very heavy charred smell. It is overwhelming for me to the point that I avoid grilled salmon which I used to really enjoy. A few people have told me that the grill marks are on the food even before they are grilled. Is this true?
I don't know of any creatures that we eat (cattle, chicken, fish etc.) that have grill marks on them while alive :) but I have seen frozen products, usually "precooked", with grill marks already in place. Some places will also pre cook various item and heat them back up maybe adding grill marks at that time or having done the grill marks first and then bringing it up to temp when ordered. The longer the protein would normally take to cook from raw, the more likely this possibility. I'd be really suspicious of fish that was precooked, afterall how long does it take to cook even the thickest piece of salmon from scratch?
