Storing used deep fry oil

I deep fried for the first time ever (used a dutch oven). I was shocked at how much oil it took! Now I certainly don't want to waste it all. I let it cool, strained it through a fine mesh sieve and have put it in a plastic tupperware bowl with lid. It is being stored down in my cold room.

any other tips? Should I restrain through cheesecloth? How long will it last?

  1. Sounds like you're doing things right. If I'm not planning on using it soon, I put it in a ziplock bag and freeze it, but that's probably overkill. I reheat very slowly just in case there's any moisture left, since that can cause the oil to splatter and boil and potentially give you a nasty burn or make a huge mess.
