Professional Chocolate Courses

Hi all,
I'm interested in taking some professional level chocolate courses. I've checked ICE and their schedule doesn't work with mine currently. And FCI's course is geared toward amateurs and isn't meant for current professionals. Would anyone here know of other resources in the NY metro area?
