Freezing Mac N Cheese

This might sound like a silly question, but have you ever frozen cooked mac n cheese into individual portions? After years of throwing out my carefully prepared schooled lunches, my son has taken to the "f" word": prepared frozen dinners (shudder) since his high school caf. has a microwave. In the interest of health, money, and just plain good mothering, does anyone have a recipe for simple mac n cheese (his fave variety) that can be cooked, frozen, and then easily microwaved at school and yet still taste good?

    I find that if I am going to freeze, it is good to overdo the cheese sauce a bit. It sort of disappears in the freezer.

      I freeze Mac n cheese all the time. When my son was on a man n cheese jag I froze scoops of it in silicone muffin tins. Once frozen I would pop them out and store in ziplock bags so he could grab what he wanted and micro easily as an after school/sport snack.

      If your son is responsible I would buy some glass containers with tight fitting lids to freeze portions. Put in a lunch bag it will stay cold but partially defrost by lunch time and they are micro safe. However if he is not responsible you might want to go with those "disposable" glad type ones so if they don't make it home you arent out too much $$.

      In terms of recipes just find one one he likes. Most are basically the same components and will freeze similarly.

        I always freeze macaroni (not just mac n cheese) in individual portions. I defrost a portion the night before in the frig so reheating does not mean drying out.

        Portions always led themselves to a quick side dish or making mac n cheese burgers (a fav at our house).
