Vegetarian seeks good eats between KS and Boulder- i-70

Driving to Boulder from Kansas City. Obviously, there is vegetarian food at either end, but seeking help in the middle. I'm thinking small town cafe's that happen to have great salads? Pies from cute bakeries that are so good you don't need lunch. Even a decent grilled cheese sandwich? Any advice for us for our road trip and and from along I-70?

    It's mostly ranchers and farmers and horse property, you might try The Grainery in Idalia, just opened a few months ago, owned by some friends of mine, real homemade food, not gourmet, I am sure they'd customize anything you want. There is a Coronas mexican Grill in Strassburg that is pretty good, not fancy or gourmet but a diverse menu. Primo Bistro had some good Italian Fare in Bennett, CO, but I am not 100% sure they are still open.

      I haven't done the drive often, and certainly not as a vegetarian, but from what I have seen, it's not just a culinary wasteland, it's a wasteland period.
