Deflating cupcakes
I tried a new recipe from a magazine last night for neopolitan (sp) cupcakes. It called for fudge brownie mix in the bottom 1/3 of a cupcake liner, bake for 8 min. then fill the rest of the way with strawberry cake mix (made with 3 eggs, 1/3 cup strawberry applesauce, strawberry cake mix and 1 c water), bake for another 10-12 min and remove from oven and let cool. I did just as the recipe called for, but 2 min. after removing the cupcakes from the oven, the cupcakes deflated....and we discovered the brownie mix at the bottom of the cupcakes had melted. What could have caused this? I followed the recipe to a tee.
