Best fine cocktails in Rockland County?

I'm trying to track down bars/restaurants with great cocktail programs in Rockland County. I'm not talking about a ton of sweet drinks whose name ends in 'tini, but real hand crafted, high quality cocktails.

Not sure what you mean by a great cocktail "program," but Hudson House in Nyack makes some wonderful grown-up, not overly sweet drinks.
