chewy noodles

I'm looking for good, chewy noodles in the NB-Edison area, or as close as I can get. I had amazing, chewy, hand-pulled noodles in Guangzhou, but every place I go here that advertises "hand-pulled" has soft noodles that aren't amazing. Is it that they wait around in the kitchen, or is it a different style?

    Is the noodle you had in Guangzhou yellow or white? In soup or stir-fried?

      White, in soup. The guy pulled 30 times or so and chucked it right into the hot water; it was in a bowl in front of me within a couple of minutes.
