Super Bowl Snacks

I'm going to have some friends over to watch Sunday's big game. All are over 50 and over weight to the point they all want low calorie snacks. In addition to fruit and veggies anybody have some ideas like baked potato chips unbuttered popcorn etc?

  1. How about some Kale chips?

    tear kale into bite sized pieces. Wash and dry well. toss with a bit of olive oil salt and pepper (cayenne for kick if you want).

    bake in oven at 350 for 10-15 mins until crisp and a bit of browning (not fully). separate onto several baking sheets (okay at same time in oven) if necessary, you don't want to crowd them or they will steam instead of bake. I use parchment on my baking sheets.

    You can drizzle or even better spray (if you have) a little olive oil and seasoning salt on your unbuttered popcorn.

    Make a light dip for your veggies using plain yogurt and spices and lemon.

    1. Just had one more thought.

      Cauliflower popcorn.

      cut up one whole head of cauliflower into bite sized pieces. toss with olive oil, seasoning salt. Roast at 425 for about an hour. Turning a few times.

      toss into a bowl and have toothpicks available. SOOO good. Roasty, sweet, decadent tasting.
