aged balsamic vinegar

I've received two bottles of balsamic vinegar recently. I don't care for it over strawberries. What do I do with it besides dress a salad?

    I especially like a couple of drops on roasted root vegetables, like sweet potatoes and parsnips.

    Also, a couple of drops on a hunk of Parmigiano Reggiano.

      I like it added to roasted veggire and Maria wrote. I also like it added to carmelized onions to top a steak. I also use it for chicken marinade.

      I don't care for any of the sweet applications such as fruit or ice cream.

        Make Parmesan crisps and eat it with those.

        Drizzle on some home made pizza.

        Or... Cocktail time! There is a strawberry, aged balsamic and hibiscus syrup cocktail at my local bar that is dangerously good.
